Wine Review: This midnight black colored Cabernet Sauvignon based wine is not shy. It opens with a blackberry, black licorice and black olive bouquet. On the palate, this wine is full bodied and savory. The flavor profile is ripe extracted blackberry with notes of black olive, black tea and oak. There are hints of balsamic, cassis, dark cocoa, cardamom and black licorice that appear towards the end and add to its complexity. The finish is dry and its moderate tannins drift away nicely. This wine needed a little air to smooth out. It settles in nicely. It appears to be unfined and unfiltered. I would decant this wine and serve it with Roy's rib roast. Enjoy - Ken
Winemaker Notes: The 2015 Phase V Cab has a gorgeous garnet color and is loaded with aromas of wild berries, licorice, and cardamom. In the mouth, a sophisticated palate with layers of chocolate, dark cherry, vanilla bean, dry sage and cinnamon. Full bodied with a velvety texture and great length.
