Wine Review: This dark ruby colored Cabernet Sauvignon from Pepper Bridge opens with an inviting red currant and cranberry bouquet with hints of loam. On the palate, this wine is medium plus bodied with medium plus acidity. It also has a round mouthfeel. The flavor profile is a black currant and stony mineral blend with notes of red plum and ripe black cherry. I also detected hints of black pepper, dark chocolate, graphite and oak. The finish is dry and its moderate dusty tannins stick around for a little while. In the short term, I would decant this Cab and serve it with a well-marbled ribeye steak. Enjoy – Ken
