Wine Review: This deep purple colored Cabernet Sauvignon and Shiraz blend opens with black cherry and blackberry bouquet with hints of sage, violets, leather, and anise. On the palate, this wine is medium plus bodied with integrated medium acidity. The mouthfeel is very nicely balanced, velvety, rich, and savory. The flavor profile is graphite and extracted black currant blend with notes of oak, blackberry, and dark chocolate. We also detected a hint of oolong tea in the mix. The finish is dry and its moderate grippy tannins show very nice length. The Tasting Panel would pair this red blend with New York strip steak. Enjoy – KWGTP
Winemaker Notes: Color: Deep garnet core, crimson rim.
Nose: Tightly coiled. Sweet American oak evident. Baking spices, icing sugar dusting. cinnamon scrolls, and Madagascan vanilla bean. Fresh black cherries and ripe black plums. Sundried tomatoes and kalamata olive tapenade.
Palate: A well-defined focus on palate. Forward facing – line and length. The fascinating interplay between Cabernet Sauvignon and Shiraz providing not only considerable length and structure, but also density. The Result... completely filling the palate. Always anticipated, a trademark creamy Bin 389 mid-palate. A wine with much to offer even in the flush of youth. Complexing flavors: savory nuances of freshly sliced fennel, pan wilted radicchio leaf and pickled turnips. Red licorice and cherry provide a sweet counterpoint. Evolved tannins seamlessly drive the palate structure. Will last many decades if you can wait that long.
