Wine Review: This opaque and deep purple colored Cabernet Sauvignon based wine from South Australia opens with a fragrant boysenberry, eucalyptus and blackberry bouquet with hints of fresh picked mint and oak. On the palate, this wine is this wine is full bodied, balanced, round and juicy. The flavor profile is black currant and boysenberry blend with notes of black plum. We also detected hints of black licorice, Baker’s chocolate, black pepper and oak. The finish is dry and its medium well-managed tannins and fruit flavors stick around for a little while. The Panel would pair this rich wine with a messy rack of barbecue beef ribs, veal medallions with mushroom wine sauce or charred leg of lamb. Enjoy – KWGTP
Winemaker Notes: Color: Bright and crimson red
Nose: Aficionados may quickly identify and proclaim 389. Layers of custard and port-wine dark jelly with flaked coconut and juniper. There are also some subtle hints of matchstick and vanilla aromas mixed in.
Palate: Balance of the sweet (Cabernet) and the savory (Shiraz). Possesses what has now often been referred to as a black forest cake. The 2018 vintage flavor profile features darker fruits closer to black cherry liqueur than a crème de cassis component of Kir. Oak and tannins are absorbed. But both are certainly present, yet not at all demanding their own space on this Bin 389 stage. Substantial, intense.
