Wine Review: This dark ruby colored Cabernet Sauvignon from Pellet Estate opens with a cocoa and black cherry bouquet with hints of blackberry. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is balanced, round and fresh. The flavor profile is a black currant and cocoa blend with notes of cedar and pomegranate. We also detected some hints of clove and red licorice. The finish is dry, and its dusty tannins linger and last for a very long time. The Tasting Panel would decant this wine before pairing it with Roy’s rib roast. Enjoy - KWGTP
