Wine Review: This slightly cloudy and dark ruby colored Cabernet Sauvignon from Pellet opens with a mild cranberry and black cherry bouquet with a hint of lavender. On the palate, this wine is medium bodied with nicely integrated medium acidity. The mouthfeel is nicely balanced, refined, and graceful. The flavor profile is a tasty red plum and oak blend with notes of cassis and fine crushed stone minerality. I also detected a hint of craisin in the background. The finish is dry and its well-managed and refined tannins linger nicely. This Cab made by Tom Rinaldi would pair very nicely with a filet mignon. Enjoy - Ken
