Wine Review: This opaque and deep purple colored Cabernet Sauvignon from Pellet Estate opens with a blackberry and oak bouquet with hints of cassis and black tea. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is smooth and creamy with juicy fruit flavors that are very forward. The flavor profile is black currant and dark roasted coffee blend with notes of oak, pomegranate, and mocha. I also detected hints of toasted coconut flakes appear towards the end. The finish is dry, and its mild tannins and flavors linger nicely. This Cabernet will pair nicely with slow cooker beef brisket with barbecue sauce.
