Wine Review: This dark garnet colored Cabernet Sauvignon from Pedroncelli reminds me of an old school Chianti Classico. It opens with a new leather and black cherry bouquet with hints of black currants herbs and black pepper. On the palate, this wine is medium plus bodied and rich. The flavor profile is a cedar influenced coffee and tart cherry blend. I also detected noted the presence of dark chocolate and oregano mixed in as well. The finish is dry and its flavors and moderate tannins linger for quite a while. I would pair this Cab with braised wild boar shanks with sweet soy and star anise or Roy’s rib roast. Enjoy – Ken
Winemaker Notes: Dark ruby in the glass the aromas of dried herbs (thyme, oregano) with ripe blackberry and plum notes typical of this vineyard’s personality. Berry flavors combine with toasty oak, pepper and a touch of vanilla. A long earthy finish with lasting fruit is simply elegant. Good acidity and soft tannins lead to great aging potential. Obviously, this wine has no connection to a world famous British Special Agent. It's simply the name of a vineyard block.
