Wine Review: This golden yellow colored Chenin Blanc from Pax is excellent! It opens with a Granny Smith apple and Anjou pear bouquet with hints of honey and ginger. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is very nicely balanced, slightly viscous, smooth, and fresh. The flavor profile is a very tasty Anjou pear and almond blend with notes of green tea and ginger. I also detected hints of mild honey, white pepper, and green apple. The finish is dry, and its flavors and acidity linger and last for quite some time. I would pair this delicious Chenin Blanc with crab stuffed halibut. Enjoy - Ken

Winemaker Notes: Wet rocks and marble outline a sexy nose of Mirabelle plums, orange blossoms, Tangerine Dreams, lime zest and white flowers. Higher in acid and ripeness than all previous versions of this wine, but longer and more noble at the same time. The exotic fruit and a wall of spice keep the flavors coming, this wine is long and sexy on the palate and is best enjoyed with chilled seafood or grilled fish.
