Wine Review: This slightly cloudy and medium purple colored GMS wine from Pax is made from fruit from the Alder Springs and Halcon Vineyards. It opens with a lingonberry and red licorice bouquet with hints of cinnamon, mild cedar and spiced red plum. On the palate, this wine is medium bodied with integrated medium plus acidity. The mouthfeel is balanced, round, layered and savory. The flavor profile is crushed stone and spiced red plum blend with notes saline and lingonberry. We also detected some hints of blackberry, craisin, and mocha. The finish is dry, and its dusty tannins linger and last for a while. The Tasting Panel would pair this GMS with a pomegranate cider pork loin roast with rosemary smashed potatoes or with slow cooked barbecue brisket. Enjoy – KWGTP
