Wine Review: This gold-colored Chardonnay from Paul Hobbs opens with a ginger and poached Bosc pear bouquet with hints of oak and lemon. On the palate, this wine is medium plus bodied with medium plus acidity. The mouthfeel is balanced, rich, and slightly viscous. The flavor profile is a concentrated Granny Smith apple tart and Christmas spice blend with notes of toasted oak, chamomile tea and butter. We also detected some hints of pineapple, almond and chalky minerality. The finish is dry, and its flavors linger and last for quite some time. I would pair this opulent Chardonnay with lobster bisque. Enjoy - Ken
