Wine Review: This very dark ruby colored Cabernet Sauvignon from Patent opens with a black currant and black cherry bouquet with hints of menthol, cedar, and violets. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is balanced, rich, concentrated and fruit forward. The flavor profile is stewed black plum and black currant blend with notes cedar and stony minerality. We also detected some hints of licorice, black cherry, and saline. The finish is dry and its fruit, acidity, and dusty tannins build-up and last for a very long time. The Tasting Panel would decant this Cab in the near term as aeration brings everything together nicely. Then we would pair it with a cowboy ribeye steak. Enjoy – KWGTP

Winemaker Notes: The 2021 Patent Cabernet Sauvignon has a very rich garnet color with clean classic Cabernet aromas of cedar, black olive, licorice, and clove with notes of cherry and leather, with a background of vanilla. A mouth coating palate is consistent with the aromatics with a long rich finish and a balance that promises a rewarding long term cellaring potential.
