Wine Review: This ruby colored Zinfandel from Once and Future opens with a cherry and cinnamon bouquet with hints of cedar. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is balanced, round, fresh, and bright. The flavor profile is a fruit forward ripe red raspberry and clove blend with notes of red plum and cedar. I also picked up some hints of cinnamon and black pepper. The finish is dry, and its flavors, acidity, and moderate tannins stick around for a while. I would pair this Zin with Chinese spareribs.
