Wine Review: This dark ruby colored Merlot from Once and Future opens with a raspberry and cedar bouquet with hints of leather, vanilla, and craisin. On the palate, this wine is medium bodied with integrated plus acidity. The mouthfeel is smooth, crisp, and clean. The flavor profile is mulberry and red currant blend with notes of cedar and clove. We also detected hints of cinnamon and oolong tea. The finish is dry, and its flavors, acidity and moderate tannin are nicely extended. The Tasting Panel would pair this young Merlot with Colorado rack of lamb or duck breast. Enjoy - KWGTP
