Wine Review: This deep purple colored Petite Sirah from Once and Future opens with a blueberry and black plum bouquet with hints of Dr. Pepper, spearmint, and saddle leather. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is balanced, round, juicy and bright with some very good tension. The flavor profile is stony minerality and mulberry blend with notes of black pepper and boysenberry. We also detected hints of oak, black tea, and a touch of prune. The finish is dry, and dusty tannins stick around for a very long time. The Tasting Panel would decant this wine for quite some time in the near term. Then we would pair this Petite Sirah with a well-marbled ribeye or smoked short ribs. Enjoy - KWGTP
