Wine Review: This dark ruby colored Zinfandel from Once and Future opens with a black plum and boysenberry bouquet with hints of strawberry licorice, black raspberry, and moist pipe tobacco. On the palate, this wine is medium bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, lush, and very smooth. The flavor profile is a brambly blend of blackberry and black raspberry blend with notes of oak, black pepper, and tart cherry. We also detected hints of red licorice. The finish is dry, and its bold tannins are very nicely extended. The Tasting Panel would decant this Zin before pairing it with a Stuart’s steak treats or a coffee rubbed grilled hanger steak.
