Wine Review: This very dark ruby colored Zinfandel from Once and Future opens with a black raspberry and blackberry bouquet with hints of oak and black pepper. On the palate, this wine is medium bodied with integrated medium acidity. The mouthfeel is balanced, round, and savory. The flavor profile is black raspberry and stewed black plum blend with notes of cedar. We also detected some hints of nutmeg. The finish is dry, and its flavors, acidity, and soft tannins drift away nicely. The Tasting Panel would pair this food friendly Zin with a German sausage goulash aka Würstchen Gulasch.
