Wine Review: This deep ruby colored Zinfandel from Once and Future opens with a black raspberry and black plum bouquet with hints of vanilla, violets, anise, and oak. On the palate, this wine is medium plus bodied with integrated medium acidity. The mouthfeel is well-balanced, super smooth, seamless, and polished. The flavor profile is mild blackberry and cocoa blend with notes of oak, graphite, and black raspberry. We also detected hints of clove, black pepper, and cinnamon. The finish is dry, and its dusty moderate tannins are nicely sustained. The Tasting Panel would then pair this Zin with braised short ribs or burnt ends. Enjoy - KWGTP
