Wine Review: This deep ruby colored Merlot from Once & Future opens with a Dr. Pepper and red raspberry bouquet with hints of stewed black plum, black pepper, and lilac. On the palate, this wine is medium bodied with plus acidity. The mouthfeel is round, bright, and juicy. The flavor profile is a strawberry and mulberry blend with notes of oolong tea. We also detected some hints of blueberry, stony minerality and red currant. The finish is dry, and its flavors and dusty tannins are prolonged. The Tasting Panel would suggest pairing this Merlot with a pulled pork platter or with a pork chop with raspberry sauce. Enjoy – KWGTP
