Wine Review: This deep ruby colored Zinfandel from Once & Future is a steal! It opens with a raspberry and black plum bouquet with a hint of triple sec and leather. On the palate, this wine is medium bodied with integrated medium plus acidity. The mouthfeel is balanced, and very smooth for a Zin. The flavor profile is black plum and strawberry blend with notes of triple sec and cedar. We also detected hints of cardamon and cinnamon tea. The finish is dry, and its moderate dusty tannins stick around for a while. The Tasting Panel would pair this Zin with a tangy pulled pork sandwich or with a fennel seed and black pepper-crusted pork loin with an herb mayo. Enjoy – KWGTP
