Wine Review: This Cava from Spain is light yellow colored and its slow rising tiny bubbles fill the glass. It opens with a fragrant bread dough and red apple bouquet hints of wet stone. On the palate, this wine is light bodied, acidic and crisp. The flavor profile is a mineral infused apple with notes of almond, tonic water and lemon verbena. The finish is dry and its flavors linger nicely after the wine is gone. This sparkler is one of the best Cava's that I have covered from Mont Marcal. Serve it with mini-quiche Lorraine appetizers. Winemaker Notes: Estate-bottled. Xarel-lo, Parellada, Macabeo and barrel fermented Chardonnay given extended skin contact, aged 20 months. A clean, elegant and complex style of Cava well suited to food pairings.
