Wine Review: This opaque and midnight purple colored Cabernet Sauvignon from Rockpile is showing very nicely now. It opens with a stewed plum and black currant bouquet with hints of black raspberry. On the palate, this wine is full bodied, balanced and fruit forward. The flavor profile is a combination red and black fruits and old oak. Those fruits are red plum and black currant with notes of boysenberry. I also detected hints of strawberry licorice and a dash of cinnamon in the background. The finish is dry and its moderate tannins fade away nicely with the fruit. This Cab has evolved nicely over the last year. It is now ready to go and I would pair it with beef bourguignon. Winemaker Notes: This wine has most beautiful deep dark red purple color. Rich, round mouth feel that evolves from deep dark blackcurrant, to blackberry, and finishing with chocolate covered cherries. With bright acidity and firm young tannins this wine drinks well now but will pay dividends with patience.
