Wine Review: This pale coral colored wine from Côtes de Provence Sainte-Victoire opens with a mild white peach and cherry bouquet with a hint of lime. On the palate, this wine is medium bodied with integrated medium plus acidity. The mouthfeel is balanced, supple and mouthwatering. The flavor profile is a saline and very mild white cherry blend with notes of ginger tea and chalky minerality. I also detected hints of white pepper and white peach. The finish is dry and pleasantly refreshing. I would pair this very versatile and pleasant rosé with Emeril's crab cakes. Enjoy - Ken
