Wine Review: This almost clear colored Sauvignon Blanc from Chile opens with a fragrant grapefruit and green pepper bouquet with hints of tomato leaf. On the palate, this wine is light bodied with some bright acidity. The flavor profile is a mineral infused green pepper with notes of yellow grapefruit. We also detected a hint of lime. The finish is dry and its flavors and acidity linger and last for quite a while. The Panel suggested pairing this very nice Sauvignon Blanc with Chilean sea bass or oysters on the half shell. Winemaker Notes: This wine is a very pale yellow color, with light green hues. The nose is complex and delicate, with aromas of citrus and tropical fruit such as mango, papaya, cherimoya and lime peel, intertwined with herbs notes. Refreshingly crisp on the palate, with concentrated fruit flavors and a fresh, salty acidity that finishes with a crisp, lingering minerality.
