Wine Review: This Cabernet Sauvignon from Matanzas Creek is a nice reflection of the 2007 vintage. It is a very friendly and elegant. It is designed to be consumed in the near term. It is opaque and very dark purple colored and opens with a mild black currant bouquet with a hint of anise and black cherry. On the palate, this wine is medium bodied, balanced, and smooth. The flavor profile is a tasty mild black cherry with hints of oak and a splash of anise and dash of black pepper. The finish is dry and its fine tannins drift away nicely. Serve this wine in the term with a filet mignon. Enjoy - Ken
Winemaker Notes: Scents of dark red fruits and licorice greet your nose and continue onto the palate where black and white pepper becomes noticeable. A long finish and sturdy, yet elegant tannins allow for early drinking and the ability to age for 8-10 years or more. An excellent to roasts and hearty stews!
