Wine Review: This opaque and dark purple Cabernet Sauvignon is exceptionally good. It opens with a fragrant black currant bouquet with hints blueberry and oak. On the palate, this wine is medium bodied, very well balanced, and smooth as silk. The flavor profile is a delicious black currant with notes of blackberry jam and nicely integrated oak. The finish is rather dry and its fine tannins and it oak notes show up here more pronounced towards the end. This elegant Cab is showing very well right now and would pair perfectly with a filet mignon at your favorite steakhouse. Enjoy – Ken
Winemaker Notes: Complex dark chocolate, coffee and cola aromas overlap generous black currant fruit accentuated with orange zest and minerals. Velvety flavors of black cherry and ripe plums provide a juicy entry that finishes chalky in its youth. Decanting or additional bottle age will allow the cocoa powder grip to release its hold offering instead a long, intriguing finish layered with vanilla, milk chocolate and berry jam. The big tannin structure in our 2007 Cabernet Sauvignon bottlings offer a chance for cellaring a magnificent vintage. Pair with cheese or a well marbled steak short-term.
