Wine Review: This slightly opaque and dark ruby colored Cabernet Sauvignon from Los Vascos opens with a vegetal bouquet of green olive and asparagus with hints of black cherry, tar and smoky meat in the background. On the palate, this wine is medium plus bodied, balanced and juicy. The flavor profile is an earthy and green olive blend with notes of red plum, stony minerality and old oak. I also detected hints espresso and cassis. The finish is dry and its flavors and moderate tannins are nicely prolonged. This old school Cabernet would pair well with beef bourguignon. Enjoy - Ken
Winemaker Notes: Ripe plum and cherry-scented nose that also features notes of licorice, saffron, cinnamon, and nutmeg that enhance the complexity of aromas.
