Wine Review: This pitch black colored Cabernet Sauvignon from Knights Valley opens with a black currant bouquet with a hint of vanilla-cola and cigar box. On the palate, this wine is full bodied, balanced and smooth. The flavor profile is black currant with notes of coffee and black cherry with a hint of black plum. The finish is dry and its moderate tannins are nicely prolonged. This Cab would pair with a veal chop. Enjoy - Ken
