Wine Review: This deep purple colored Cabernet Sauvignon based wine from Washington State opens with mild black cherry and cassis bouquet. We also picked up some hints of flint and moist pipe tobacco. On the palate, this wine is medium bodied, balanced and smooth. The flavor profile is mild black plum and gentle graphite blend with notes of green tea. There were also hints of toasted oak. pomegranate, and espresso mixed in. The finish is dry and its dusty tannins stick around for quite some time. The Panel would suggest pairing this red blend with a New York strip steak or Roy’s rib roast with Yorkshire pudding. Winemaker Notes: L'Ecole #41 has been producing Pepper Bridge Vineyard Apogee since 1993. Apogee represents our best effort to capture this vineyard’s distinctive flavors and characteristics. The 2017 vintage has brooding aromas of black cherry, cocoa, licorice and leather. Flavors of tobacco, currant and baking spice are wrapped in fine-grained tannins on a robust finish.
