Wine Review: This opaque and pitch black colored Napa Cabernet was a hit with the tasting panel. It opens with an earthy forest floor and blackberry like bouquet. On the palate, this wine is full bodied and balanced. The flavor profile is a tasty black plum and black cherry blend with a hint of menthol. The finish is dry and its moderate chalky tannins show nice length. This Cab would be very nice with a New York strip steak. Enjoy - KWGTP
Winemaker Notes: This Cabernet showcases the complexity of our rugged, mountain terroir. It exudes aromas of ultra-ripe black raspberries, cardamom, and nutmeg. The avors convey liqueur-like richness and fruit concentration. The exotic overtones came from lots harvested in the warm days of early September. The silky integrated tannins are the result of long-macerated lots picked in early October when the seeds were chocolaty and sweet. Like our 2004, the 2007 Cabernet is immediately appealing. Rather than decanting I recommend you simply pour it into your biggest glass, sit back and watch it open up before your eyes!
