Wine Review: This deep ruby colored Cabernet Sauvignon from Knights Bridge opens with a gentle black currant bouquet with hints of black plum, cardamon, and pencil shaving. On the palate, this wine is full bodied with nicely integrated medium plus acidity. The mouthfeel is balanced, smooth and seamless with good structure and tension. The flavor profile is mild black cherry and gentle oak blend with notes of crushed stone and black currant. We also detected hints of tea and bay leaf. The finish is rather dry and its tannins build-up and stick around for a very long time. The Tasting Panel would decant this Cab for an hour plus before serving it with Roy's rib roast. Enjoy – KWGTP
Winemaker Notes: The 2019 Knights Bridge showcases the finesse and varietal intensity that defines the Cabernet Sauvignon of its vintage. It opens with an ethereal bouquet of cassis and Madagascar chocolate, with top notes of lavender blossom. The middle palate is pliant, full, and elegant, showing off the cooler climate of Knights Valley. This beauty will reward tasters now. Yet reveal more complex layers in the next 10-20 years. This wine pairs beautifully with hearty meat dishes. Enjoy with a grilled New York steak and herb butter or roasted lamb chops with a red wine reduction.
