Wine Review: This deep purple colored Cabernet Sauvignon from Knights Valley opens with a red currant and black raspberry bouquet with hints of leather and black cherry. On the palate, this wine is medium bodied with medium acidity. We also found it to be balanced, round and velvety. The flavor profile is a mineral and herbal tea influenced black plum with notes of green olive and cedar. We also detected hints of boysenberry and black licorice mixed in. The finish is dry and its dusty tannins build-up and stick around for a very long time. The Panel would pair this Cab with a grilled bone-in leg of lamb with charred-scallion sauce or Roy’s rib roast. Enjoy – KWGTP
Winemaker Notes: Compelling aromas of blueberry, star anise and cacao, along with subtle hints of sweet French oak and Asian spice. Bold, full-bodied and structured on the palate with flavors of dark chocolate, blueberry cassis and fig; the long, mouth-filling finish is chewy and rich with balanced acidity and silky tannins.
