Wine Review: This midnight purple colored Cabernet Sauvignon from Knights Bridge is a hedonistic delight. It opens with a fragrant and inviting black cherry and cassis bouquet with a hint of blueberry. On the palate, this wine is full bodied, slightly acidic, concentrated and rich. The flavor profile is a black currant, blackberry and oak blend with notes of black tea, black licorice and minerality. I also detected a hints plum and tart cherry towards the end. The finish is dry and its sticky tannins build-up and last for a very long time. This is a pretty complex Cab. It will take some time for the tannins and oak to resolve. If you can't wait to try it, decant it for a while and serve it with a well-marbled ribeye. Enjoy – Ken
