Wine Review: This very dark ruby colored Cabernet Sauvignon from Knights Bridge was well-received by the Tasting Panel. It opens with a black cherry and black raspberry bouquet with hints of eucalyptus and cigar box. On the palate, this wine is medium bodied, balanced and approachable. The flavor profile is a cherry-vanilla and plum blend with hints of cinnamon and cola. We also pick up some hints of French roast coffee and dark chocolate mixed in. The finish is dry and its dusty tannins show very nice length. The Panel suggested pairing this Cab with duck confit or ribeye steak with a dollop of blue cheese. Enjoy - KWGTP
Winemaker Notes: The 2015 Knights Bridge Estate Cabernet is the first vintage of our flagship wine originating from our 2009 vineyard re-plantings. This well-proportioned wine abounds with notes of blueberry and mocha with subtle hints of vanilla and spice. The palate has a lush entry filled with dark chocolate, black cherry, and notes of blueberry and vanilla. The mouth-filling finish is chewy and savory with a balanced acidity and silky tannins. Suggested pairings include grilled steak topped with blue cheese or a dense flourless chocolate cake.
