Wine Review: This dark red colored Cabernet Sauvignon from Jordan opens with a fragrant cherry and blueberry bouquet. On the palate, this wine is medium bodied, balanced, soft and a little fruit forward. The flavor profile is a tasty red plum and red cherry blend with hints of red currant, refined minerality and a touch of oak in background. The finish is dry and its flavors and fine tannins drift away nicely. This crowd-pleasing Cab will pair well with many refined dishes. I would pair it with roasted pheasant with a wild cherry sauce. Winemaker Notes: Aromas of black cherries wrapped in a spice box of nutmeg, clove and allspice jump from the glass. The palate is filled with flavors of black currants and plum that lead seamlessly to silky tannins and black cherry notes. Blackberry, Mission fig and black cherry notes linger on the finish. Enjoy now after decanting for 30 minutes or cellar through 2035. This is a lovely wine for food pairing. Try it with herb-crusted lamb, roasted chicken, grilled pork loin or even a mushroom risotto.
