Wine Review: This white gold colored Sparkling Wine from Iron Horse displays lots of tiny streaming bubbles. It opens with a pineapple and ginger bouquet. On the palate, this wine is medium bodied, balanced, smooth and nicely coats your mouth. The flavor profile is a pleasant blend of bread dough, green apple, ginger. I also detected hints of grapefruit and lime mixed in. The finish is dry and refreshing. I would suggest pairing this very good "Wedding Cuvee" with pan-seared scallops over linguini – Enjoy - Ken
Winemaker Notes: Wedding Cuvée is our interpretation of a Blanc de Noirs. In blending this wine we chose Pinot Noir lots that were extremely expressive and fruit forward. Then in a decided step away from convention, we blend in a bit of steely Chardonnay to add a firm acid backbone. The result is a wine that features stone fruit, pink grapefruit, Tahitian lime, blood orange and raspberry with a gentle mouthfeel. It is a food friendly wine that works well with full-flavored fish, pork chops, and chicken.
