Wine Review: This pale golden yellow colored Sparkling wine has a few streams of small bubbles. It opens with a lemon and bread dough bouquet with hints of green apple and toasted almond. On the palate, this wine is light plus bodied with medium plus acidity. We also found it to be soft, delicate and slightly creamy. The flavor profile is a hazelnut and green apple blend with notes of mineralty, oolong tea and mushroom. The finish is dry and pleasantly fades away. We would pair this very elegant sparkling wine with Coquilles Saint Jacques or a pumpkin ravioli with creamy toasted hazelnut sauce. Enjoy - Ken & Mark
Winemaker Notes: By nose – rising dough, orange marmalade and baked apple. By mouth – ripe red apple, mandarin orange and hazelnut. A perfect wine with poached eggs, smoked salmon and toast, hard cheeses and classic roast chicken with Yukon gold potatoes.
