Wine Review: This pitch-black colored Cabernet Sauvignon from Ilaria opens with a blackberry, black currant and black licorice bouquet. On the palate, this wine is full bodied with plus acidity. The mouthfeel is round, balanced and savory. The flavor profile is a black currant, oak, and root beer blend with notes of loam and milk chocolate. The finish is dry and its moderate tannins drift away nicely. I would pair this Cab with a filet mignon. Enjoy - Ken & Dave
Winemaker Notes: The 2019 Cabernet Sauvignon is deep garnet-purple colored, it skips out of the glass with lively notes of wild blueberries, black cherries, and menthol, plus hints of pencil shavings and bay leaves. Medium to full-bodied, it has a serious structure with flirtatious, flamboyant fruit, offering plenty of layers and an earthy finish.
