Wine Review: This Cava with medium-sized bubbles has always been a standout. Even though it is already ten years old, it could easily afford another 10 years. For some, this high acid, mouth puckering sparkler might be a bit too traditional, but it is so well composed. On the nose, the wine is bright, offering notes of lime zest, jasmine rice, and hints of fresh herbs like basil. On the palate, the wine is a hint of toasted brioche, with continued nuances of citrus fruits, and a touch of baked apples on the finish. This is the perfect complement to either something greasy like fish and chips or a finer seafood dish like oysters on the half-shell. – Nicolay
