Wine Review: This pale straw colored Cava with medium bubbles opens with wet stone, lime and bread dough like bouquet. On the palate, this wine is light bodied, pleasant, balanced and easy to enjoy. The flavor profile is a mineral infused mild green apple with hints of white pepper and a touch of clementine. The finish is rather dry and refreshing. This Cava is pretty food friendly and would be a perfect opener with bacon wrapped scallops. Enjoy - Ken
Winemaker Notes: The Huguet family devotes certain high parcels to the production of world-class sparkling wine, blending the Montonec and Macabeo with a significant percentage Pinot Noir. Aged a minimum of 30 months, hand-riddled and disgorged on order.
