Wine Review: This dark ruby colored Cabernet Sauvignon from Chalk Hill opens with a black cherry, blackberry and black currant bouquet with some hints of graphite. On the palate, this wine is medium bodied with moderate minerality and a bit of acidity. The mouthfeel is velvety and smooth. The flavor profile features dark berry juice, mild pomegranate, Baker's chocolate and graphite. The finish is dry, and its nicely integrated tannins linger nicely. We would service this very nice Cab with Roy’s rib roast. – Karen & Stuart
