Wine Review: This opaque and dark ruby colored Cabernet Sauvignon from Hidden Ridge is a fruit bomb. It opens with a fragrant boysenberry bouquet with a hint of red raspberry. On the palate, this wine is full bodied, balanced, concentrated and fruit forward. The flavor profile is a ripe black raspberry with notes of oak and black cherry. I also detected some nice hints of blueberry and minerality mixed in. The finish is dry and its moderate tannins are very sticky. I would pair this Cab with slow cooked barbecue beef brisket. Winemaker Notes: Our 2012 55% Slope starts with ripe black fruit aromas followed by spice, cocoa, black tea and hibiscus. The full bodied palate is dense with the flavors of cocoa, blackberry and brown sugar, carried on smooth tannins and supple texture. The flavors of tea, chocolate and cherry carry through on the long finish.
