Wine Review: This dark ruby colored Cabernet Sauvignon from Hickinbotham is Excellent and was very well-received by all that tried it. It opens with a black currant and iron shavings bouquet. On the palate, this wine is full bodied, balanced and savory. The flavor profile is a tasty black currant, green olive and gentle mineral blend. I also detected some notes of oak and hints of red plum and clove that added to its complexity. The finish is dry and its well-managed tannins show extremely long length. Our group suggested pairing this impressive Aussie Cab with a well-marbled ribeye steak. Enjoy – Ken
Winemaker Notes: Intense, yet lithe, aromas of red and black currants, juniper berries, and lavender are punctuated by hints of vanilla and green tobacco leaf. On the palate the wine is sinuous and alluring, with musky notes of bergamot and fresh plum; with a seductive note of violets; all framed by satiny tannins and a mouth-watering finish. This is an excellent bright modern example of what Australia once called claret.
