Wine Review: This pale white gold colored Champagne opens with lots of ultra-fine streaming bubbles. On the nose, we detected aromas of toasted brioche and light lemon with hints of strawberry, ripe pear, and toasted almond. On the palate, this wine is medium plus bodied with medium acidity. The mouthfeel has good balance and is slightly creamy and bright. The flavor profile is bread dough and light lemon blend with notes of chalky minerality, grapefruit and green apple. We also detected hints of ginger. The finish is dry, long and refreshing. We would pair this sparkler with a corn and crab chowder or with bacon wrapped scallops. Enjoy – Ken and Mark
