Wine Review: This straw-colored Champagne from Henriot displays both tiny and medium sized steaming bubbles. It opens with a moist bread dough and green apple bouquet with a hint of quince. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is balanced, bright and a tad frothy. The flavor profile is ginger, lime and stony minerality blend with notes of white pepper. I also detected hints of lemon verbena and saline. The finish is rather dry and refreshing. This Champagne will serve as a nice apéritif. With food I would pair it with bacon wrapped scallops. Enjoy – Ken
Winemaker Notes: The first nose is intense, almost heady. Yet it is counterbalanced a few seconds later by an incredible elegance with airy and floral notes. The wine is in motion with a succession of the following aromatic notes: summer flowers, meringue, ripe fruits, then fresh summer currants, chalk, minerality, patina... it is an endless impetus. On the palate, it’s the same ballet coming together, which makes this champagne creation so unique and compelling.
