Wine Review: This dark ruby colored Cabernet Sauvignon opens with a fragrant and appealing mulberry and raspberry with a hint of espresso. On the palate, this wine is medium to full bodied, slightly acidic and savory. The flavor profile is a mineral infused blackberry with notes of black fig and macerated cherries and a touch of blueberry. The finish is dry and its fine tannins and flavors drift away nicely. This opens up quite a bit after being open for a while. I would decant it and serve it with a seared duck breast with cherries and port sauce. Enjoy - Ken
Winemaker Notes: Deeply scented, this wine’s bouquet will fill the room as soon as you pop the cork! Aromas of forest floor and earth yield to notes of Bing cherry, blueberry and anise. Superbly balanced, this wine enters the mouth rich and velvety with flavors of black chocolate, licorice and spice, opening up to warm cinnamon and clove. Finish is long and sultry, yet clean. Structured with deep, velvety tannins, this wine is an extraordinary food wine and is built to last. Pair with Beef Burgundy or chocolate cheesecake with blueberry sauce!
