Wine Review: This pitch black colored Cabernet from Yountville opens with a mild blackberry and black currant bouquet with a hint of black licorice. On the palate, this wine is full bodied, balanced and rich. The flavor profile is a ripe blackberry and black licorice blend with nicely integrated old oak and gentle minerality. I also detected hints of black pepper and clove. The finish is dry and its tannins are rather sticky and linger. This big boy Cab requires a little decanting before you serve it with cowboy ribeye steak. Enjoy - Ken
Winemaker Notes: Full-bodied and well balanced, this Cabernet Sauvignon is packed with black cherries, cassis and mocha with a whiff of cardamom. Its supple and smooth mouthfeel lingers with a long, elegant finish. Having the patience to cellar this wine will reward you in the glass years from now. Serve with simply roasted meat dishes or all by itself to fully enjoy the wine’s complex flavors.
