Wine Review: This almost clear-colored Sauvignon Blanc from Greywacke opens gentle lime and ripe pink grapefruit bouquet with hints of gardenia and pine pitch. On the palate, this wine is medium bodied with gentle integrated medium acidity. The mouthfeel is balanced, round, smooth and delicate. The flavor profile is mild pink grapefruit and lime blend with notes of stony minerality. We also detected hints of honeydew melon, white pepper, thyme, and saline. The finish is dry, refreshing, and its flavors and acidity drift away nicely. The Tasting Panel would pair this refined Sauvignon Blanc with grilled swordfish steak and asparagus risotto. Winemaker Notes: Enticing aromas of cassis, lemon sorbet and green mango, with a delicate dusting of white pepper spice.
