Wine Review: This deep purple colored Cabernet Sauvignon from the Knight's Valley in California opens with a pomegranate and macerated black cherry bouquet with hints of currant. On the palate, this wine is medium plus bodied with medium plus acidity. The mouthfeel is round, astringent, bold, and a bit rustic. The flavor profile is a concentrated blackberry and black tea blend with notes of oak and stony minerality. I also detected hints of black olive, dried currant, and vanilla cola at the very end. The finish is rather dry and its very dusty tannins are quite extended and long. I would decant this big boy Cab for at least 30 minutes before serving it with sizzling steak fajitas. Enjoy – Ken
