Wine Review: This yellow colored Champagne has lots of little fine bubbles that dissipate quickly. It opens a mild bread dough bouquet with a hint of green apple. On the palate, the flavor profile is a chalky mineral infused lime with hints of white pepper and a touch of Anjou pear. The finish is dry and its flavors and minerality linger for quite sometime. This Champagne is very good friendly and would pair perfectly with bacon wrapped scallops. Enjoy - Ken

Winemaker Notes: COLOR: Golden yellow with delicate green tints typical of the great Blanc de Blancs. Very fine bubbles. ON THE NOSE: It is both mineral and floral with aromas of flowers and white fruits, apricot and Mirabelle plum. Very light notes of lemon, citrus fruits, crystallized quince and honey. ON THE PALATE: Harmonious, complex and delicate with a great freshness. A crisp and well-structured champagne with a gentle silky finish. FOOD MATCHES: This cuvee, with all it's finesse, elegance and freshness is the perfect aperitif. Perfect also with scallops, with a crab remoulade.
